Storage of your Canning Projects

If your jars of food have been properly process, the vaccum is sealed and coled they are ready to be stored. Before placing the jars in your pantry; remove the bands and wipe off the lids and jars to remove any food residue. Rinse and dry. Do not replace the bands. Band that are stored on sealed jars will corrode and will be difficult to remove.

Label each of your jars with the content, date the product was canned. Your food will keep indefinately if it has been properly canned. However, after a year some chemical changes will occur. These changes include the flavor, color, texture and nutritional value of the product. For this reason , you should use the product that was canned and stored for the longest period first.

Even if you process your foods correctly they will loose some nutritional value after a period to time. If you store your processed food at temperatures above 70 degrees F. this process will be accelerated. Also do not sote where the food might be subject to freezing, this will cause the food to expand the the seal to break. The ideal temperature for storing home canned foods is between 50 degrees and 70 degrees F.

Store your food in a place that is dark most of the time. Light will cause certain foods to fade in color. Your jars may be stored in cartons to keep your canned foods from the light. The carton you purchased your Mason Jars in will be perfect.
