The boiling water and steamppressure processing
guidelines in this book are for altitudes at or belwo 1,000 feet above
se leel. Adjustments must be made if processing is completed at higher
altitudes. Because air is thinner at igher altitudes, both pressures and
boiling points are affected. Water will boil at temperatures well below
212 degrees Feet altitudes greater than 1,000 feet above sea level. This
means with both the boiling water and the steam-pressure canner methods,
adjustments in processing must be made. With the boiling water method,
additional processing time must be allowed. With the steam-pressure method,
additional pressure is required. The Altitude chart below gives requirements
for both methods ar various altitudes.

The processing times given in our recipes are
based on canning at or below 1,000 fet above sea level using the
boiling-water nethod. When processing at altitudes higher than 1,000
feet above sea level, adjust the processing tome according to the
Boiling-water Canner Chart.
The steam-pressure method is used for low-acid foods. The pounds
pressure given for low-acid foods in this book are based on using
a weighted-guage canner and processing at or below 1,000 feet above
sea level. When using a dial-guage canner or processing at altitudes
higher than 1,000 feet above sea leavel addjust pounds pressure
accordint to the Steam-Pressure Canner Chart. |
